I would like to be able to limit the number of purchases on an attribute so that only so many people can enroll in a particular workshop and when it is filled, that attribute should no longer be available for purchase.

Agreed! Would love to have more flexibility with attributes. Along with your desire of a maximum I would also like to be able to use them with free activities, and only if they select an attribute that has a cost would they be sent to the payment page.
